Breakfast Casserole

Materials:

  • bowl to mix ingredients in 
  • casserole dish to bake in
  • measuring cup
  • fork
  • skillet (1 tbsp. of olive oil)

Ingredients:

  • 4-6 eggs, 
  • 1 3/4 cup milk
  • 3/4-1 cup Bisquick
  • 8 oz. of shredded cheese, your favorite
  • 1 cup grated Parmesan cheese
  • salt, pepper, herbs to taste
  • 1/4 cup butter, softened, cubed, mixed in 
  • sauteed veggies: broccoli, spinach, onion, red and/or green bell pepper, garlic, etc.

Directions:

  1. Preheat oven to 375 degrees.
  2. Saute veggies.  While that's cooking, 
  3. Use a fork to mix eggs and milk together in bowl.
  4. Add Bisquick and cheeses.  Mix with fork.
  5. Add  sauteed veggies and seasoning after they cool.  Mix with fork.
  6. Pour into casserole dish.  Mix in cubes of butter.
  7. Bake for approx. 50 minutes.
~Makes 6-8 servings, depending on how many eggs used
